A Feast Fit for a Patriot

IT WAS A SUPER BOWL PARTY AFTER the fact, but still a delicious victory. UMass Amherst’s director of dining services, Ken Toong (left), had staked an authentic New England clambake on the Patriot’s Super Bowl contest. Toong’s counterpart at Duke University, Jim Wulforst, anted up a Carolina BBQ in support of the Panthers. Needless to say, Toong and staff members took the prize, and enjoyed a luncheon of pulled pork, beef brisket, black-eyed peas, coleslaw, and sweet corn muffins. |
